The highly regarded reputation of the multi–award–winning Thorn
Park Country House was founded on the consummate professionalism of owner–operators
David Hay and Michael Speers. With world–class regional accommodation
in combination with the fine cooking of David Hay and the front–of–house
excellence of Michael Speers, Thorn Park Country House, since it opened in
1987, has been the destination of choice for all discerning travellers to the
South Australian Clare Valley wine region. Cooking schools, art classes, featured
wine dinners and guest chefs were just some of the regular special events that
have added to the brilliance of their reputation. Thorn Park Country House
has received every possible state and national tourism award and many coveted
national and international awards.
After 23 years David and Michael were looking to run a smaller
operation and, when the opportunity arose to sell the property to their neighbours,
the Jesuits of
Seven Hill Wines, it seemed serendipitous. Thorn Park Country House is now
used as a Jesuit retreat, and their new venue, Thorn Park by
the vines, is located in a perfect Australian bushland and vineyard
setting on the edge of Sevenhill. Approximately 2 km from their previous location
in the Clare Valley, South Australia, Thorn Park by the vines opens for its first bookings in March 2009.
